How to Make Cassava into a Delicious Cake

In this guide, we’ll share two recipes: steamed rainbow sassava cake and steamed cassava sponge cake. Let’s get started.
1. Steamed Rainbow Cassava Cake
Ingredients:
- 1 kg grated cassava
- 1 tsp SP (cake emulsifier)
- 50 g all-purpose flour
- 5 eggs
- 230 g granulated sugar
- 100 ml thick coconut milk or fresh milk
- 100 g melted margarine
- 1 tsp vanilla extract
- Food coloring
Instructions:
- Beat the eggs, sugar, and SP until the mixture becomes pale, thick, and fluffy.
- Add vanilla and mix well. Reduce the mixer speed, then gradually add the grated cassava while continuing to mix until well combined.
- Add the flour and mix evenly, then turn off the mixer.
- Pour in the coconut milk and gently fold with a spatula until combined. Add melted margarine and mix until smooth.
- Divide the batter into four portions and color each as desired. Pour about two tablespoons of each color alternately into the pan until all the batter is used.
- Steam in a preheated steamer. Cover the lid with a cloth to prevent water droplets from falling onto the cake. Steam for about 35 minutes over medium heat.
- Once cooked, remove and let it cool.
2. Steamed Cassava Sponge Cake
Ingredients:
- 1 kg grated cassava (do not squeeze out the liquid)
- 4 eggs
- 270 g granulated sugar
- 1 glass cooking oil
- ½ tsp salt
- Mocha and yellow food coloring paste
Instructions:
- Beat the eggs and sugar with a mixer until pale and fluffy.
- Add the grated cassava and mix well using a rubber spatula.
- Add salt and stir until evenly combined.
- Pour in the cooking oil and gently fold until fully incorporated.
- Divide the batter into two portions and add food coloring as desired.
- Pour the batter into a greased cake pan.
- Preheat the steamer along with the pan.
- Pour in the first batter and steam for 15–20 minutes.
- Test with a skewer; if it comes out clean, pour in the second batter and steam again for 25–30 minutes until fully cooked.
- Remove from the steamer and let it cool before slicing. Serve and enjoy!
